Good new recipe.

The weekend went by in a blur. We actually had a babysitter, so my husband and I got to enjoy a night out on Saturday. This meant Kids Choice two nights in a row. Oh, the joy. Actually, on Saturday we were driving back from some errands, and Kyra out of the blue asked, “Mom, when can we eat bacon?” Of course this led to BLT’s for dinner. Funny, because Garrett doesn’t like tomatoes that much, and Kyra doesn’t like lettuce that much, but in a BLT everything was devoured. The power of bacon!!

I felt like we need to rebound this week, so I have planned a few good dinners in a row.
Sunday night we tried a new recipe for a lamb ragu from Cooking Light. It was really delicious, especially for a ricotta cheese lover like me. It was very easy to make.

Garrett LOVED it, as did my husband. Kyra liked parts of it, but wasn’t crazy about the cheese. It was a nice alternative to have lamb rather than ground meat, but I think the recipe would be just as good, and healthier, with ground turkey or chicken. Aside from the ground lamb, most of the ingredients are those that we usually have around, so that is always nice. I went heavy on the carrots and onions, so I didn’t feel it was necessary to make anything on the side. The kids both ended up with fruit after ice cream anyway.

The rest of the week involves new recipes as well. I will let you know how it goes.

    Great recipe! My kids didn’t love the taste of lamb, unfortunately, but I thought it was delicious!
