A Bigger Fish.

We had salmon last night, and I finally got a big enough fish to feed everyone happily. (We eat a pound and a half of salmon!) I baked it with lemons and basil, so it was simple and healthy. On the side I made a couscous salad in lettuce cups. It turned out sort of ugly because I didn’t have the nice Boston Lettuce leafs, just iceberg. It tasted good though, and was easy and cool on a hot night.

One way to make dinner more fun and less of a battle with kids is to make it about more than just the food. A few years ago we started “Best and Worst” at dinner. As it sounds, we go around the table and announce the best thing that happened to us that day, and the worst. The kids enjoy this part of dinner, and it is a good distraction from fights about eating vegetables. It is a nice window into the school day as well, if your kids are not talkers. We always laugh because our kids usually say there is no “worst” because they had a great day. If only we all had such a great daily existence.
