We are in our usually short-lived post-vacation health binge. Sunday night upon our return from vacation we were determined to have a healthy dinner. We were fairly vegetable starved, so we had a greek salad. For protein I made white bean dip spread on french bread. The dip is really easy- a can of white beans, some parmesan cheese, garlic and onion, in a food processor. I usually add a bit of olive oil for emulsifying.

Kyra didn’t love the bean dip, but everyone else was happy. My kids really like salad lately, so I am determined to try to include it more often. Salad is a pain to make because it is a lot of chopping. When I make one I make it big and only dress a part of it, so I can save the leftovers.

I give us about two more days before we want french fries again.
