Squeezing it in.

Something about the return to school turns every weekend into a crazy jam-packed sprint to Sunday night. This is not conducive to cooking dinner. Sunday we had church, then an open house that we had to clean and evacuate for, then my daughter had tennis, then she had a birthday party. The part was from 5-6:30, which meant that she ate pizza there, but the rest of the family had nothing to eat. So I cooked a really early dinner before I left. I used a new Cooking Light recipe for salmon. The citrus flavors were refreshing, and it was relatively quick to put together with minimal cleanup.

It seems like every night for the next few weeks at least one of us has an obligation that complicates dinner- work, sports, open school nights, moving. Dinner is going to be a lot of take out the next few weeks, but hopefully we will be back on course soon.
