Easiest Dinner Ever.

OK, it is Taco Tuesday. But I am sort of burnt out on tacos, and I wanted something really fast but healthy. Take a tortilla (whole wheat is best), add brie cheese, thinly sliced apples, and greens mix (I used arugula and spinach and red leaf lettuce) on one side of the tortilla. Fold it over, throw it in the pan with a full kettle on top (or a brick wrapped in foil), press and melt. Flip, press and melt. Eat and enjoy. So delicious, and a serving of fruit and veggies!
