You don’t even want to know.

We moved last Thursday. It was relatively smooth as far as moves go, but it was a horrendous amount of logistical planning, lack of sleep, and physical labor. Needless to say, everything that could be put on the back burner, was ignored. Dinner included. So you really don’t want to know what we have eaten for the last few weeks for dinner. Lots of meals out of boxes, cans, and takeout containers. I couldn’t squeeze another planning item into my little brain, so I refused to plan ahead for meals. Which goes to show you what happens when you don’t plan your meals in advance: it is too easy to fall to junk that is fast and easy, but has no nutritional value.

But, we are back in action. Our new kitchen is great and all set up. Last night was Tuesday, so we had bean burritos (brown rice, black beans, peppers, onions, fresh salsa, guacamole and cheddar, all wrapped up in a tortilla). Tonight we had a simple pasta dish: whole wheat rotini, broccoli, chicken sausage, a little white wine, a little pesto sauce. It was yummy and everyone ate it happily.

Food is really love around here, so I found it very unsettling to be scrambling for dinner nightly. It is nice to be settled.
