On a bun.

Isn’t everything better on a bun? Especially a good french roll type of bun, right? We were watching Duke beat Princeton tonight at dinner time, so I knew we would have a rare night of dinner in front of the TV. I made pulled pork using my slow cooker. It is the easiest meal in the universe: throw a pork roast in the slow cooker for 8 hours on low. Remove it, shred it with forks. Drain the liquid from the slow cooker. Return pork, toss with BBQ sauce of your choice. Put on rolls of your choice.

The pork reheats really well, and is delicious on top of nachos or in tacos. It is a really useful recipe, and you could make it nicer with seasonings, homemade BBQ sauce, or an Asian sauce. Tonight I made a veggie slaw on the side. I buy the premade “rainbow” salad (cabbage, broccoli, carrots, all shredded), and toss it with low fat blue cheese salad dressing. The kids eat the sandwich and the slaw separately, but we grownups like to put the slaw right on the bun.

I am always on the lookout for good slow cooker recipes, but usually the simple ones are best.
